MY name is Lynn and I am a carb addict.
I can’t help it, I love rice, pasta and potatoes (particularly in chip form).
But as I have gotten older, my once starchy diet has begun to catch up with me.
While in my 20s and 30s I could eat what I wanted, I’ve started gaining weight in all the wrong places since I hit the big 40 and had a kid.

I opted for three low-carb meals per week and was, to be honest, a bit apprehensive.
But I actually loved getting out of my rut, trying new meals and losing a bit of my gut into the bargain.
The meals were super easy to pull together with everything portioned out and the recipes easy to follow.
Some of my favourites included hake with chorizo butter, samphire and green beans as well as teriyaki pork mince with cauliflower rice.
Now some of the options weren’t a hit with my wee one, but that’s fine as you can supplement meals with staples you have in the cupboard.
So when I was having veg with my meatballs, for example, I made a portion of pasta for him.
One of the big revelations for me in the meal plan was cauliflower rice. This was such a delicious and filling alternative to normal rice – without the guilt of eating carbs.
After four weeks on the plan, I genuinely found myself being able to wear my favourite M&S jeggings, which had been languishing in my wardrobe as they’d felt too tight around the tum.
So while I am not giving up pasta for good, this plan gave me the green light to cut down on the carbs and try something new.
