If you put an open pot of yoghurt back in the fridge, there will often be a watery layer floating on it the next day. But what exactly is that layer? And should you pour it away, throw your yoghurt away completely or can you safely eat it? Food microbiologist Frank Devlieghere (UGent) explains.
